Lazy Tuna Patties

I'm seriously on a tuna kick. Like I have been craving it. I mean, I like tuna and all. I certainly don't have an aversion to tuna. But to crave it?  Kinda weird, if you ask me. But, I'm rolling with it. I like tuna in a variety of ways, tuna salad being one. But this week, I decided to make tuna burgers for dinner. Thankfully, I have a recipe on the blog for that! So I did what was easy and just looked up that recipe! You can see it here:  http://karen-proverbs31.blogspot.com/2011/01/tuna-burgers-receive-85-star-rating.html But when I read the ingredients, I knew that having been gone on vacation and then moving my oldest cherub back to college  -- I didn't have everything I needed. So I did what anyone would do. I did a google search. I found this recipe that I used as my starting point. I didn't tell the Mr. and my girl cherub what it was. I just fixed it and we ate. They both agreed that they liked it! I like the ...

Tuna Salad

I've had a can of tuna in my pantry for a while now. I think about using it. I look at it and think, "I really need to use that." But today, I craved tuna! I think "craving" is your body's way of getting something it's missing. Seriously! Like iron, or vitamins, or minerals, or Riboflavin. I'm kidding about Riboflavin; I just like saying that, even though I don't know what it is! For lunch, I took my one little can of tuna and made tuna salad. Only my girl cherub was at home, so I offered to share. She's wasn't to excited about tuna salad; she said it smells gross. True. Why is that? What a turn-off; to rip off the lid of tuna at work . . . . and the room fills with the disgusting smell of tuna! But I'm at home today so I didn't worry about offending anybody; not even my girl cherub! After I made the salad, I offered my girl cherub a bite. G...

Salmon with Linguine and Lemon Sauce

Remember the salmon from the other night that the Mr. and Cherubs grilled? I've been saving a bit of it. Actually, about 1/2 of it. I knew this week would be a bit crazy and having a quick meal would be helpful. Tonight was the night for a quick meal. I used the left-over grilled salmon and wanted to put pasta with it because that would be easy. But for it to be really easy, I needed an easy sauce. I quick decided that lemon would be the base of my sauce because lemon and salmon just go together. Well, lemon wasn't really the "base;"  butter was the base -- but lemon would be the taste! Here's the simple sauce. This would be great with the pasta and grilled asparagus for a meatless dish, I do believe! Pasta with Lemon Sauce Linguine (or pasta of your choice) 1/4 cup butter (this was the only thing I measured; everything else was just thrown in) 1 TBSP chopped garlic (read note above) lemon juice to taste (about 2 TBSP or so . . .read...

Grilled Salmon

Bottom line:  we love grilled salmon! It is one of our very favorite things to make at home. I adore the grilled salmon on top of our "go to salad," as our cherubs call it!  It's a spinach salad with dried cranberries, chopped purple onion, sliced strawberries, roasted almonds or pecans, slices of mandarin oranges, shaved Monterrey Jack cheese, and a lemon poppyseed dressing. But truthfully, I'll eat grilled salmon with just about anything! Remember the other night the Mr. and the cherubs made dinner for me when I returned home? Besides the delish vanilla cupcakes and the roasted brussel sprouts, they made grilled salmon. It was fantastic! You can't mess up grilled salmon, unless, of course, you burn it. But other than that, your imagination is your ticket to the flavor train! This is our basic seasoning for the fish. Grilled Salmon 1 large fresh salmon fillet olive oil salt/pepper lemon pepper (or any seasoning of your choice) garlic...

Mango Salsa

Yesterday, it was so tempting to post some delicious recipes for "Cinco de Mayo."  But the reality is, there are a ton of recipes already out there and truthfully, I didn't have anything "new." As a side note, my cherubs say that it's "Cinco de mayo" . . .as in short for mayonnaise!"  Gives them a real laugh! In honor of the delicious and fresh taste of the Latin foods, I want to share with you a fabulous treat. Mango salsa.  It's great on chips, chicken, or fish.  It's easy to make and it's healthy!  That's a bonus! Mango Salsa 1 large ripe mango, peeled, pitted, and diced* 1/4 to 1/2 medium red onion, finely chopped 1 Jalapeño chile, minced (include ribs and seeds for a hotter taste if desired) 1 small cucumber, peeled and diced (about 1/2 cup), if desired.  I didn't desire it today 3 Tbsp fresh cilantro leaves, chopped 3 Tbsp fresh lime juice Dice mango into a bowl.  You decide how big you want those ...

My Favorite Marinade

Many years ago, like . . . M.A.N.Y years, Laronda, a friend of mine, turned me on to Dale's marinade.  This was nearly 20 years ago, and at that time Dale's was hard to find.  It is made in Birmingham, AL.  At that time, it was easier to get The Washington Post than it was to get Dale's; but who really cares about "The Post!"  We wanted Dale's!  Because it was "exclusive," that made it even more special! Fast-forward 20 years and now Dale's is in basically every store I shop!  It's usually towards the top of the shelf, on the same aisle with ketch-up, b-b-q sauce, and other fancy condiments! I just LOVE Dale's.  I think I could drink it right from the bottle.  No!  I haven't tried it -- but I've been tempted! Here's what I do with my Dale's, in numerical order! I always but 2 or 3 bottles at a time; I never want to be without the stuff. I but lots of chicken breasts. I buy lots of gallon siz...

Tuna Burgers Receive an 8.5 Star Rating!

Oh, come on now -- are you acting like my children?  Did you read the title and wrinkle up your nose and mentally think "Gag!"  I will be honest with you!  I feel like I'm working under-cover this afternoon as I prepare dinner BEFORE the kids get home!  There's no way I want them to see the tuna can!  And I've been thinking about what I can even call "it!"  I want them to try it before they decide to gag!  I will tell you, it has smelled very good while I've been doing Operation Covert Cooking!  As I put the ingredients together, it reminds me of a crab cake; which, by the way, I enjoy!  The ingredients are simple, it throws together in a snap (I know, because I'm working covertly), and it's healthy!  Oh, great!  Those of you who have stuck with me through the tuna have just rolled your eyes and figured "how good can THAT be?" This recipe comes from Taste of Home magazine, the Nov./Dec. issue.  By the way, I got a prete...
