White Chocolate Blueberry Lemon Bark


Lately, the Mr. and my girl cherub are having to pick up a little more of the chores around the house.

OK -- so maybe all of the chores!

Cooking, cleaning, laundry, packing lunches.

Everything!

Over the weekend, I fell and broke my foot.

It didn't sound like it was any big deal with the doctor at the ER,

but my Monday follow up visit shed a wee little different light on the situation.

So I'm still cooking . . .from the living room.

The Mr. says, "ok, what's next?"

and I tell him what to do with the recipe.

It's been kind of interesting, but everything, so far, has turned out just great!

After dinner the other night, he kept asking if there was something he could make.

I couldn't think of anything simple,

but I dreamed up this little treat that I knew would be easy.

This little gem of a treat has me thinking about all the things that can be created with almond bark!

The girl cherub made brownie bites for a school project tomorrow,

but there was a flop with them coming out of the pan.

So guess what we're going to do to salvage those?

YEP!  Hello white almond bark!

Until then, here is the white chocolate blueberry lemon bark recipe.

You can make this little treat for one, or make the whole package . . .for one, or a crowd!

White Chocolate Blueberry Lemon Bark

White chocolate bark (we used 1/2 of a package)
blueberry chex cereal
lemon zest from one lemon

In a microwave safe bowl, on low wattage, placed desired amount of white bark into a bowl.
Stir bark every 30 seconds until it is melted and smooth.

Stir in a desired amount of cereal into the melted bark.  You want enough to have texture mixed in, but you don't want it all to clump up into "coated cereal."  The Mr. used about a cup for the 1/2 of package.  Your preference rules!  Stir the cereal into the bark.

On a silpat or wax paper, pour out the bark and smooth to a thin layer.  Quickly sprinkle additional blueberry cereal onto the melted chocolate.  Quickly, zest the lemon over the melted chocolate.

Gently, smoosh the cereal and zest into the melted chocolate so that it "sticks" when dry. 

Allow the bark to dry then break into pieces.

 I've been to eat at Neiman Marcus one time. It was really good! "Everyone" talks about the Neiman Marcus cafe and the things they love from there. Because I've only been once, my variety of selection is limited! However, I have had lunch with friends that serve this Neiman Marcus soup recipe. Chicken and Artichoke Casserole

We first had this delicious casserole on Mother's Day while feasting at "Dining on Persimmon Hill," which is a restaurant at the National Cowboy and Western Heritage Museum in Oklahoma City, OK.  Side note --- if you have the chance to visit the Museum, please take advantage of the opportunity.  It is a wonderful experience!  And don't forget to eat at the museum restaurant.  It's delish!
