Cookie Ice Cream Sandwiches



I can't tell you how many times my girl cherub has asked for cookie ice cream sandwiches.

Oh, yes I can . . .

what I really mean is I don't want to tell you how many times I've failed at the attempt!

The first time she asked, I thought,

"Sure!  This can't be hard!"

It was for her birthday party and we were having a lot of friends and family to celebrate.

After I made the beautiful cookie ice cream sandwiches, I stuck them in the freezer.

Only to go back hours later and the ice cream had melted into a puddle on the cookie sheet

and re-froze.

Yes -- that's what happens when your freezer defrosts itself!

For that one, I had to use a spatula and cut the ice-cream into squares and scoop the re-frozen melted ice cream and the frozen cookie onto a plate.

Real fun.

That failure just made me try again.

And again I did!

Several times!

Until I finally thought,

"I will win at this!"

Here's what I did:

  • made the cookies and let them cool
  • softened the ice cream
  • scooped the ice cream, shaped to fit the cookie
  • placed shaped ice cream into freezer
  • placed cookies in an air-tight container
  • assembled just before eating
  • ENJOYED!!!!!
Cookie Ice Cream Sandwiches

even number of baked cookies (can use homemade cookies, a cookie mix, or bakery cookies)
ice cream flavor of your choice
sprinkles, if desired

Using your favorite cookie dough, make an even number of cookies, all the same size. The easiest way to do this is to use a cookie or ice cream scoop.  Of course, I made gluten free cookies and used a gluten free ice cream.  But if this isn't your need, then just use your favorite gluten-filled cookies.

Bake the cookies and allow to cool completely.

Select your favorite ice cream flavor.

Allow the ice cream to soften a bit.  Use an ice cream scoop to make ice cream balls.  Please the scooped ice cream onto wax paper and gently apply pressure to "smoosh" the ice cream into a disk that is the same size or just a wee bit smaller than the size of the cookie.

Work quickly.

Place ice cream disks on a wax paper  lined cookie sheet and place in the freezer and allow to firm up.

Just before serving, take 2 cookies and place an ice cream scoop between the two cookies.  Gently press the top and bottom cookies together to "smoosh" the ice cream just a bit.

If you desire, roll the cookie ice cream sandwich in sprinkles before serving.

I've made reference to our trip last Summer to different European countries. My prized souvenirs are cookbooks from each country. I'm not sure, of the 4 cookbooks, which is my favorite, but I surely enjoy the one I purchased while in Greece.
