Taco Pizza



It's hot and we're on this "money saving" program with our air.

Which means while the Mr. is at work, practically freezing everyone out of the office,

I'm at home, conserving energy and agreeing to his "money saving plan" like a Proverbs 31 kind of wife.

He comes home, and says, "Oh my word!  It's hot in here!!"

Oh really? 

"I thought the sweat beads on my forehead were from my fervent cleaning I was doing before you got home!"

No?

Hum . . . not sure!

So back to it being hot in the house.

The energy is cheaper after 7:00.

Well, if I start cooking dinner at 7:00, my cherubs would think they weren't going to get fed.

They'd be ravenous if I didn't do something speedy.

Taco pizza fit the bill this week for something quick!

Using your favorite pizza dough, whether pre-made or a mix, prepare the crust.

Then get ready for this easy-peasy taco pizza!

Taco Pizza

1 pizza crust (I used a gluten free mix.  I seasoned the dough with chili powder and oregano.)
1 lb. ground beef, browned and seasoned with taco seasoning
1 can refried beans (I use fat free)
chopped lettuce
chopped tomatoes
shredded cheese
chopped onions
cojita cheese, crumbled
salsa

Prepare your pizza crust -- which means either take it out of the package or mix it up.  Place the pizza crust on your pizza pan.  If you are using a raw dough, I like to par-bake it for about 10 minutes.  You don't have to do this, it's just my preference.

To the ground beef mixture, add a can of refried beans and stir until thoroughly mixed and well heated.

Spread the taco/bean mixture onto the pizza crust, going almost to the edge . . .but just stop short.  You don't want the mix to spill over the edge!

Place in the oven and bake for 15-20 minutes until hot all the way through and the dough is done.

Remove from the oven and allow to cool for 5 minutes, then cut into desired slices.

Place the taco toppings on the counter and allow your family to build their own taco pizza.

 I've been to eat at Neiman Marcus one time. It was really good! "Everyone" talks about the Neiman Marcus cafe and the things they love from there. Because I've only been once, my variety of selection is limited! However, I have had lunch with friends that serve this Neiman Marcus soup recipe. Chicken and Artichoke Casserole

We first had this delicious casserole on Mother's Day while feasting at "Dining on Persimmon Hill," which is a restaurant at the National Cowboy and Western Heritage Museum in Oklahoma City, OK.  Side note --- if you have the chance to visit the Museum, please take advantage of the opportunity.  It is a wonderful experience!  And don't forget to eat at the museum restaurant.  It's delish!
