Latin Roasted Sweet Potato Tacos



Sometimes I amaze myself!

Before Thanksgiving, the Mr. and I headed to the store to grab some necessary groceries.

Sweet potatoes must have been a good price, because the Mr. stocked. us. up!

He must have thought we were going to feed a small army!

When we got home, I realized I already had sweet potatoes.

Now -- I like sweet potatoes, but we certainly had a lot of them!

I started wondering what to do with the abundance we were experiencing.

Trying to think of "meatless" meals, I thought about tacos.

I couldn't really sell the family on the option when I offered it.

So while they were away, I started cooking.

This way, they couldn't complain!

It was brilliant on my part, I might add!

After peeling and chopping the sweet potatoes, I set out to season and roast them to perfection.

After that, the magic happened.

At dinner, I told the Mr. and my girl cherub that at a trendy restaurant,

these would be called, "Fall Bounty Tacos."

They didn't go with it,

but they did say I made a winner!

Latin Roasted Sweet Potato Tacos

2-3 very large sweet potatoes, peeled and cubed
olive oil, to lightly coat the potatoes
1 1/2 tsp. cumin
1/4 tsp. chili powder
3/4 tsp. cinnamon
pickled onions*
cranberry salsa**
chopped cilantro
lime crema***
chopped fresh jalapeno
roasted and chopped green chilies
corn tortillas, warmed

Preheat oven to 400 degrees.

In a large bowl, toss the peeled and cubed sweet potatoes with the olive oil and seasonings.  Pour the seasoned potatoes onto a foil lined baking sheet.  Bake for 30 minutes or until the potatoes are tender and "roasted" looking.

Fill the corn tortilla with roasted sweet potatoes, a few pickled onions, a smear of cranberry relish, a spoonful of green chilies,
 a sprinkle of chopped cilantro, and a dollop of lime crema.  If you want a little smidge of heat, top with a few chopped fresh jalapenos.

You'll be delighted with the taste!

*** Lime Crema recipe:
to one cup of sour cream, add one to two packages of "tru lime" packets, and a very small pinch of chili powder and mix together.  The crema is "to taste."

 I've been to eat at Neiman Marcus one time. It was really good! "Everyone" talks about the Neiman Marcus cafe and the things they love from there. Because I've only been once, my variety of selection is limited! However, I have had lunch with friends that serve this Neiman Marcus soup recipe. Chicken and Artichoke Casserole

We first had this delicious casserole on Mother's Day while feasting at "Dining on Persimmon Hill," which is a restaurant at the National Cowboy and Western Heritage Museum in Oklahoma City, OK.  Side note --- if you have the chance to visit the Museum, please take advantage of the opportunity.  It is a wonderful experience!  And don't forget to eat at the museum restaurant.  It's delish!
