Mango Salsa

We really do love mango. I'm not certain what it is about this fruit that is so enticing. Maybe it's their beautiful color!  Seriously!  Look at the picture!  The yellow, green, red, and orange  . . . they're amazing! And they can sometimes be a little expensive. But not necessarily in the summer. That's when the mangos are the best! Yesterday, the girl cherub and I bought a box of mangos. Now, we like mango . . .but my boy cherub is the one who really digs mango! But he's not at home this summer. So with that in mind, I needed to come up with some things to make with our many mangos. One of the things I want to try is mango agua fresco. I think it would taste great! Roasted Corn and Black Bean Salsa

When my girl Cherub goes to a party and comes home wanting to cook; we may be in trouble! Honestly!  She comes home from being at a bunco party with my mom and tells me about two different appetizers she had that we just "have" to make! The next day, she gets herself into the pantry and starts looking for the necessary ingredients. Don't you know:  we have them! She sets off telling me what she thinks is in the corn and bean salsa. And we commence to making it. She tastes. We adjust. She tastes. She gives the thumbs up. Pineapple Salsa

I added grilled tilapia to the menu this week. I have to admit: if it's not grilled salmon, I don't make a lot of fish stuff. I'm not really sure why. I think I'm afraid! I don't have too much experience cooking fish. So I don't really have a great technique. Also, I don't want my house to smell like fish . . . for days! I'll forgo eating healthy omega 3 stuff for not having a smelly fish house. Truth. With grilled tilapia on the menu, I decided we needed something with the fish. Like a salsa. Cranberry Salsa

About a week ago, the Mr. and I headed to the Texas Hill Country for a little get away. It was a perfect weekend! We went with some friend; we shopped, we ate, we laughed, and we listened to great music each night! One of the places that we ate, served cranberry salsa and chips. It was phenomenal! I knew I wanted to make it for the holiday season . . . . and with 8 bags of cranberries in my freezer, I knew I had enough ingredients! The minute I see cranberries in the store, I start buying! There are several great recipes that I like to make during this time of year, and this is one to add to the list! The Mr. had the recipe on his phone, but when I started to make the salsa, I didn't have the recipe. But I remember reading it -- so I just started making it! I mean, how hard can it possibly be? Homemade Salsa II

For my cherub's 15th family birthday celebration, we did a tailgate party and watched the OU game! We did a ton of fun tailgate food that was really yummy! One of the many new recipes I tried for that day was this salsa recipe. We are salsa hounds! We love salsa! I will be making this again, for sure! I loved how easy it went together and how tasty it was! Salsa II 1 28 oz can whole tomatoes, well drained 1 ( 8oz) can of pickled jalapenos and carrots . . .and don't use the carrots (unless you want to!) 1/4 cup onion 1 tsp. garlic salt 1 tsp. salt 1 tsp. cumin 1 tsp. sugar 1 tsp. lime juice Place all ingredients together in a blender and blend until smooth. Refrigerate any unused portion . . . like that will happen!

Pico de Gallo

"Cinco de Mayo" was nearly a week ago . . .but don't tell my family that!  We're on a "fresh Mexican food" kick! In honor of all the good things we've had recently, I want to share with you a quick recipe for pico de gallo.  Image taken from the internet There are lots of theories about what pico de gallo is. Some say it's a basic salsa. Some say it's a relish, of sorts. Some say it's a dip. Some say it's a garnish. Personally, I have no opinion on the "exactness" of what pico de gallo is -- but I do know it's good and we really like it!  Pico de Gallo 3 Roma tomatoes, quartered, seeds cleaned out salt 1/2 of purple onion, chopped cilantro, chopped 1/2 lime, squeezed Quarter tomatoes and clean out the seeds.  Just run your finger through the tomato to clean it out.  Sprinkle with a small amount of salt and turn upside down on a paper towel.  This allows for the tomato to sweat a bit of the liqui...

Yesterday, it was so tempting to post some delicious recipes for "Cinco de Mayo."  But the reality is, there are a ton of recipes already out there and truthfully, I didn't have anything "new." As a side note, my cherubs say that it's "Cinco de mayo" . . .as in short for mayonnaise!"  Gives them a real laugh! In honor of the delicious and fresh taste of the Latin foods, I want to share with you a fabulous treat. Mango salsa.  It's great on chips, chicken, or fish.  It's easy to make and it's healthy!  That's a bonus! Mango Salsa 1 large ripe mango, peeled, pitted, and diced* 1/4 to 1/2 medium red onion, finely chopped 1 JalapeƱo chile, minced (include ribs and seeds for a hotter taste if desired) 1 small cucumber, peeled and diced (about 1/2 cup), if desired.  I didn't desire it today 3 Tbsp fresh cilantro leaves, chopped 3 Tbsp fresh lime juice Dice mango into a bowl.  You decide how big you want those ...
