We have been inside since Monday night! We were so excited when they decided to cancel school today! "Mr." thought school might be in session today -- but wait 'til you see the pictures I'm posting! We have about six inches and it's still coming down! How fun will this be! (I know, that's really a question, but I already know the answer, so I made it exclamatory!).
As I walked outside I was profoundly aware of how quiet it was; it was so still. For a moment, I just stood and soaked it in -- listening to the quietness; and being thankful! Psalm 46:10 says, "Be still, and know that I am God; . . . I will be exalted in the earth." This morning, as I popped outside to snap some pictures of the snow -- I'm reminded that what I see is only given to us through God's creative hand!
We're going to enjoy another day in our jammies -- playing some games, watching t.v., reading and brushing up on the History test that was scheduled for last Tuesday! We'll bundle up and play in the snow and use our sledding disks! We'll have a hearty bowl of Cincinnati Chili (recipe to post) and we'll pray that the frozen pipe in the laundry room doesn't burst! The one in the bathroom thawed out with no problem! YEAH! And -- we'll be thankful for another day to be still!
Cincinnati Chili
1 lb. ground beef
2 medium onion, chopped and divided
2 cloves garlic, chopped
1 cup thick b.b.q sauce
1/2 cup water
1 TBSP chili powder
1 tsp. black pepper
1/2 ounce unsweetened chocolate, grated (or cocoa powder)
1/4 tsp. ground cumin
1/4 tsp. turmeric
1/4 tsp. ground allspice
1/4 tsp. cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground coriander
1/4 tsp. ground cardamom
1/2 tsp. salt
tomato juice, as needed
9 ounces spaghetti, cooked and lightly buttered
1 - 16oz can kidney beans, heated and drained
1 pound cheddar cheese, shredded
oyster crackers, as garnish
Brown meat with half of the chopped onion and garlic. Drain the fat from the meat. Add the b.b.q sauce and bring to a boil. Add the spices. Cover pan and lower heat. Simmer for 30 minutes, stirring occasionally. The chili will thicken as it cooks. Add tomato juice as necessary to create the thickness you desire.
To make each bowl of Cincinnati chili, start with a layer of spaghetti, top with hot chili, add a few beans, if desired, add some chopped onion that was reserved. Sprinkle with shredded cheese and oyster crackers. Serve immediately!
**This recipe adapts so easily! Don't have an ingredient, don't add it! Don't like an ingredient -- don't add it! Make it your own and use what you have! This chili has a distinctively different taste and it's great for a change!
