Creamy Crock Pot Chicken

OH!  This is so wonderful!  Today "we" . . .and yes, it's "we!" are out of school again!  This time, though, we knew before we headed off to bed so "we" . . .and here, it's more "us" as in the adults!  . . . were able to take advantage of sleeping in! 

It's been great except for the rolling black-outs they are conducting!  You know, when it's a bone-chilling 16 degrees -- a few minutes with your heat off doesn't take long for your fingers to start turning blue!  Not to mention, we have no carpet in our house!  These hard-surface floors get cold in a hurry!  Lucky us, we have a frozen pipe in our bathroom!  With the space heater plugged in and blowing hot air on it, hopefully we'll escape without any trouble. 

"We"  . . .and yes, it's "we" keep checking to see if school is cancelled for tomorrow too!  I've told the kids 100 times -- and you know that's no exaggeration, that it won't be posted this early!  But wouldn't it be great if they surprised us and DID post it this early!  Think of the joy and squeals we'd produce if we knew we had another day at home!  Yippee!

started the track off of the mantle and used
a marble jump to land to the rest of the track
on the ground!  It's totally cool!
Today, we've played more games and the kids are still in their jammies!  Some warm and delicious waffles with buttermilk syrup (recipe is on the blog) for breakfast we did enjoy!  Nothing like trying to get breakfast made before the electricity was turned off again!  Both of the kids have gotten their reading done and studied for their tests this week! 

Snow days, or in this case, ice days, are a blessing from the Lord.  I really believe it's His way of saying "slow down!"  It's really a sabbath of sorts!

With such a cold day outside, the yumminess of something creamy and hot will just hit the spot.  I don't think I've posted this recipe yet.  It is so easy and a crowd pleaser with the kiddos!

Creamy Crock Pot Chicken

4 frozen boneless and skinless chicken breasts
1 package Good Seasonings dressing packet
1 - 8oz block of cream cheese*, cut up

Noodles or Rice to serve under the chicken

Place frozen chicken in your crock pot and sprinkle with the dry dressing mix.  Turn on high and cook for 4-6 hours or until done.  When done, using 2 forks, shred the chicken into chunks in the crock pot.

About 30 minutes before serving, drop in cream cheese and melt.  Stir around, mixing the seasoning, cream cheese and chicken together.  Serve over the noodles or rice.

*I use the Weight Watcher's cream cheese.  It's cheaper and healthier than the other leading brand!

 I've been to eat at Neiman Marcus one time. It was really good! "Everyone" talks about the Neiman Marcus cafe and the things they love from there. Because I've only been once, my variety of selection is limited! However, I have had lunch with friends that serve this Neiman Marcus soup recipe. It is so delicious that I wanted to pass it along to you! If your weather is like our weather, one day you're making soup and the next your grilling out! Chicken and Artichoke Casserole

We first had this delicious casserole on Mother's Day while feasting at "Dining on Persimmon Hill," which is a restaurant at the National Cowboy and Western Heritage Museum in Oklahoma City, OK.  Side note --- if you have the chance to visit the Museum, please take advantage of the opportunity.  It is a wonderful experience!  And don't forget to eat at the museum restaurant.  It's delish!
